how to export data from surface plot

Hi,

I have a colored surface plot in 2D of the velocity field and I want to export the data in a txt-file so that I can plot it with matlab.
There are different options when exporting the datas like "sectionswise" and "spread"...The problem is, that the datas in the txt-file are sorted in 3 columns (x,y,color). But this makes it very complicated to plot in matlab. Isn't it possible to export the data in a matrix with x rows and y columns and with the belonging color values in the matrix? This would be much easier. But I didn't find out how to export the data like this.
