Make sure that your license includes the optional LiveLink for MATLAB. You can check that under File> Licensed and Used Products.
If it does, you will find its documentation under File>Help>Documentation. It covers all aspects of the interface, including postprocessing. See page 29 and following in the Introduction to LiveLink for MATLAB manual, version 6.3, for a starting point. Another starting point to learn how to use LiveLink for MATLAB is this video.
